    Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and chopped kale. Sauté for about 5-7 minutes until the mushrooms are tender and the kale is wilted.

    In a bowl, whisk the egg whites, salt, and black pepper until well combined.

    Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to combine and ensure even distribution of the vegetables.
