    Heat vegetable oil in a skillet over medium heat. Season the green tomato slices with salt and black pepper. Fry each slice until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    If using leftover brisket, slice it thinly and reheat in a skillet over low heat until warmed through.

    In a large saucepan, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.
