    Activate the Yeast

    In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

    Make the Dough

    Add the melted butter, salt, and flour to the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

    Shape the Pretzel Bites

    Preheat your oven to 425°F (220°C). After rising, punch down the dough and divide it into small pieces (about 1 inch). Roll each piece into a ball.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and stir in the baking soda.

    Boil the Bites

    Drop the pretzel bites into the boiling water bath for about 30 seconds, then remove and place them on a greased baking sheet.

    Sprinkle with Sea Salt

    Sprinkle coarse sea salt on top of each pretzel bite.

    Bake in the preheated oven for 12-15 minutes or until golden brown.

Cheese Sauce

    Make the Roux

    In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until bubbly.

    Gradually whisk in the milk until smooth and bring to a simmer.

    Add Cheese and Seasoning

    Stir in the shredded cheddar cheese, garlic powder, salt, and black pepper. Continue stirring until the cheese is completely melted and the sauce is smooth.

    Remove from heat and serve warm alongside the pretzel bites.
