Method

Fish

  1. 1

    Prepare the batter

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer while whisking until the batter is smooth and thick.

  2. 2

    Heat the oil

In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Batter and fry cod

Dip each cod fillet into the batter, ensuring it is completely coated. Carefully place the battered fish into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Fries

  1. 4

    Cut the potatoes

Peel the potatoes and cut them into thin strips to make fries.

  2. 5

    Fry the potatoes

In a separate pot or deep fryer, heat oil to 350°F (175°C). Fry the potato strips in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then season with salt to taste.

Tartar Sauce

  1. 6

    Mix the tartar sauce

In a small bowl, combine the mayonnaise, finely chopped pickles, capers, lemon juice, and fresh dill. Stir well until all ingredients are mixed and set aside in the refrigerator until ready to serve.
