Warm the glass

Preheat a heatproof mug by filling it with hot tap or near-boiling water. Let stand 30 seconds, then carefully pour out the water.

Measure and combine

Add 2 tablespoons (30 ml) Ancient Age bourbon, 1 tablespoon (15 ml) fresh lemon juice and 1 tablespoon (15 ml) honey into the warmed mug.

Dissolve honey

Pour 4 ounces (about 120 ml) of water that has just been taken off the boil into the mug. Stir briskly until the honey is fully dissolved into the hot liquid (about 15–20 seconds).

Garnish and season

Add a lemon wheel or a twist to the mug and drop in a cinnamon stick if using. Grate a light dusting of nutmeg over the top if desired (use only a pinch if you prefer subtle spice).

Adjust and serve

Taste and adjust: add extra honey to sweeten or another 1/2 tablespoon of lemon juice to brighten, to taste. Serve immediately while hot.
