Prepare and season barrel

Clean and swell

If using a new small American oak barrel (or used but dry), rinse it with hot water. Fill the barrel completely with hot (not boiling) filtered water and allow it to sit 12–24 hours to swell the staves and check for leaks. If using oak spirals/staves, sanitize with hot water and let drain; no swelling required.

After swelling, drain the water. If any leaks persist, repeat the hot-water swell or use a sanitized funnel/plug to repair. Allow the barrel interior to cool to ambient temperature before adding spirits.

Blend and fill

Measure and combine base spirits

In a clean, sanitized mixing container, combine 3000 ml Verde Amaras Mezcal Espadín, 1000 ml Cynar, 500 ml Peychaud’s Aperitivo, and 1000 ml Cocchi Vermouth di Torino. Gently stir to homogenize. Total blend volume ~5.5 L.

Taste the blend neat. It should be herbaceous, bitter-sweet, with smokey mezcal backbone and a fortified-wine nuttiness. Note: the final profile will gain oak, roundness, and slight oxidation in aging.

Fill the barrel

Using a clean funnel, decant the blended mix into the seasoned oak barrel, leaving minimal headspace (1–2 cm). If headspace is larger, top up with a small amount (up to 50 ml) of neutral spirit or brandy to minimize oxidation during aging.

Seal the barrel tightly. Label with start date and contents.

Aging and monitoring

Age for 7 months

Store the sealed barrel in a cool, dark place with moderate consistent temperature (12–20°C / 54–68°F) and moderate humidity. Let the blend age for 7 months (approximately 210 days). During this time, the oak will impart vanilla, coconut, tannin, and subtle spice while mellowing the fortified vermouth component and integrating bitterness.

Check the barrel monthly for leaks and evaporation. If evaporation (the angel’s share) creates significant headspace, top up with neutral spirit or brandy to maintain liquid contact with wood and limit excess oxidation.

At about 4–5 months, sample small amounts (20–30 ml) to evaluate development. Look for balanced oak notes: if the oak influence is too strong before 7 months, you may decide to bottle earlier; if too light, continue to 7 months or longer. The recipe targets 7 months for a medium oak influence.

Prepare to bottle

When aging is complete (7 months), transfer barrel contents to a sanitized container. Allow the liquid to settle for 24–48 hours to let any fine particulate drop out.

Taste and, if needed, adjust: if the blend seems slightly viscous or too rich, you may reduce by adding a small amount (up to 2–3% of total) filtered water to open aromatics. If a touch more sweetness or bitterness is desired, you may carefully blend small increments of Cocchi Vermouth di Torino or Cynar, but keep changes minimal to preserve the aged character.

Filter the liquid through a fine mesh or paper filter into sterilized bottles and seal. Label with bottling date and age. The bottled Alcinda will keep well refrigerated or stored in a cool dark place; oxidation after opening behaves like fortified/aperitivo drinks.

To serve

Stirred on the rocks

Place a large ice cube in a chilled rocks glass. Pour 60 ml (2 oz) of Barrel-Aged Alcinda over the ice. Express an orange peel over the glass (twist to release oils) and rub the peel on the rim, then drop it in. Optionally add 1 dash of Peychaud’s or Angostura bitters on top for aromatic lift. Serve neat and sip slowly.

Alternatively, serve 45 ml (1.5 oz) Alcinda stirred with 15 ml (0.5 oz) additional Cocchi Vermouth di Torino if you prefer it slightly lighter and more fortified-forward; stir 20–30 seconds with ice, strain into a chilled coupe, garnish with expressed orange peel.
