Make the Filling
In a mixing bowl, combine the ground venison, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.
Assemble the Potstickers
Lay out a wonton wrapper on a clean surface. Place about 1 tablespoon of filling in the center of the wrapper. Moisten the edges with a little water, fold the wrapper over to create a half-moon shape, and press the edges to seal. Repeat with the remaining wrappers and filling.
Cook the Potstickers
Heat a large skillet over medium heat and add a bit of oil. Place the potstickers in the skillet in a single layer and cook for about 2-3 minutes, or until the bottoms are golden brown. Add 1/4 cup of water to the skillet, cover, and steam for an additional 5-7 minutes, or until the potstickers are cooked through.
Serve
Remove the potstickers from the skillet and serve hot with your choice of dipping sauce.
