Cook the Pasta
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add sliced bell peppers and cook for about 5-7 minutes until they are tender.
Add Coconut Milk and Seasoning
Pour in the coconut milk and stir in the jerk seasoning. Allow the mixture to simmer for about 3-4 minutes.
Combine Pasta and Sauce
Add the cooked penne pasta to the skillet and toss to coat the pasta in the sauce. Season with salt and black pepper to taste.
