    Prepare ricotta base

    Drain ricotta if very watery: place ricotta in a fine-mesh sieve lined with cheesecloth or a paper towel set over a bowl for 10–15 minutes. This step prevents a watery whipped texture.

    Blend

    In a food processor or high-speed blender, combine drained ricotta, softened cream cheese, heavy cream, lemon zest, lemon juice, and 3/4 of the salt and pepper. Process until very smooth and airy, about 45–60 seconds, scraping down sides once. Taste and adjust seasoning with remaining salt and pepper.

    Transfer whipped ricotta to a shallow serving dish and use the back of a spoon to create gentle swirls to catch the drizzle later. Keep at room temperature for up to 30 minutes before serving; if made ahead, refrigerate and bring to room temperature 20–30 minutes before serving.

Hot honey drizzle

    Infuse honey

    Combine honey and red pepper flakes in a small saucepan and warm gently over low heat for 3–4 minutes, stirring, until the honey is fluid and aromatic. Do not boil. Remove from heat and stir in apple cider vinegar to brighten the flavor.

    Taste and adjust heat: if the honey is too viscous for drizzling, stir in up to 1 teaspoon hot water to thin. Let cool slightly so it remains warm but not scalding when poured over ricotta. If you prefer less heat, strain out most flakes before drizzling, reserving a pinch for garnish.

Crunch & finish

    Prepare pistachios

    Coarsely chop the pistachios with a knife on a cutting board. For extra flavor and crunch, toast them in a dry skillet over medium heat, stirring, 2–3 minutes until fragrant; let cool.

    Assemble and finish

    Drizzle 1 tablespoon of olive oil over the swirled whipped ricotta, then spoon the warm hot honey evenly over the surface (about 3–4 tablespoons, more to taste). Scatter chopped pistachios over the ricotta, sprinkle finishing sea salt flakes, and add the optional fresh thyme or microgreens. Finish with a final small drizzle (about 1 teaspoon) of olive oil if desired.

    Serve immediately with toasted bread or crostini. Leftover whipped ricotta can be refrigerated in an airtight container for up to 3 days; bring to room temperature and gently re-whip with a tablespoon of cream if it firms up.
