Method

Crispy Chicken Bites

    Bake or fry

    If using store-bought frozen chicken bites, preheat oven to 220°C (425°F). Arrange 10 pieces on a baking sheet in a single layer and bake 12–15 minutes or until golden and internal temperature reaches 75°C (165°F). If frying, heat oil to 180°C (350°F) and fry 3–4 minutes until crisp. Keep warm on a rack.

    Transfer to the sampler platter when ready. Serve with ranch.

Mini Vegetable Spring Rolls

    Cook from frozen

    Preheat oven to 200°C (400°F). Arrange 6 mini spring rolls on a baking sheet and brush lightly with oil. Bake 10–12 minutes, turning once, until crisp and golden. Alternatively deep-fry at 180°C (350°F) for 2–3 minutes.

    Let rest 1 minute, then place on platter with sweet chili sauce.

Cajun Fries

    Oven method

    Preheat oven to 220°C (425°F). Toss 2 cups of frozen or fresh fries with 1 tbs vegetable oil and 1 tsp Cajun seasoning. Spread in a single layer and bake 18–22 minutes, turning halfway, until crisp. For extra crispiness finish under broiler 1–2 minutes, watching closely.

    Season with a pinch of salt while hot and transfer to the sampler plate.

Garlic Parmesan Wings

    Prepare wings

    If using pre-cooked wings, reheat in a 200°C (400°F) oven 8–10 minutes until hot. For raw wings, toss 6 pieces with 1 tbs oil, roast at 200°C (400°F) for 25–30 minutes, turning halfway, until internal temp 75°C (165°F).

    Garlic parmesan toss

    Melt 1 tbs butter in a small pan, add 1 minced garlic clove and cook 30 seconds until fragrant. Remove from heat, stir in 2 tbs grated Parmesan and 1 tbs chopped parsley. Toss hot wings in the mixture to coat.

    Place on platter; garnish with remaining parsley and a lemon wedge.

Hummus & Pita

    Assemble

    Spoon 1 cup hummus into a small shallow bowl. Warm 6 pita triangles in a 180°C (350°F) oven for 3–4 minutes or toast lightly. Arrange pita around the hummus bowl on the sampler plate.

    Drizzle 1 tsp olive oil over hummus and sprinkle a pinch of paprika if desired.

Mozzarella Sticks

    Cook

    Bake 6 frozen mozzarella sticks according to package instructions (usually 10–12 minutes at 200°C / 400°F) or deep-fry at 180°C (350°F) 1.5–2 minutes until golden. Do not overcook to avoid cheese leakage.

    Serve immediately with marinara sauce in a ramekin.

Onion Rings

    Bake or air-fry 8 frozen onion rings per package instructions until golden and crisp (typically 10–12 minutes at 200°C / 400°F or 8–10 minutes in an air fryer at 190°C / 375°F).

    Place on platter and offer ranch or ketchup for dipping.

Spicy Buffalo Cauliflower

    Toss 8 cauliflower florets in 1 tbs oil and 2 tbs buffalo sauce. Spread on a baking sheet and roast at 220°C (425°F) for 15–18 minutes until tender and slightly charred, turning once.

    Serve with a small ramekin of ranch on the sampler plate.

Dipping sauces & finishing

    Arrange sauces

    Spoon 1/2 cup marinara, 1/2 cup ranch, and 1/4 cup sweet chili sauce into three small ramekins. Place them on the platter where they are easily reached from each item.

    Garnish

    Sprinkle chopped parsley over the plate and tuck lemon wedges near the wings and cauliflower. Ensure hot items are grouped but not stacked so crispiness is preserved.
