Prepare sausage

If using raw sai oua, cook thoroughly first: grill or pan-fry sausages over medium heat until internal temperature reaches 160°F (71°C) and juices run clear, about 8–12 minutes, turning frequently. Let rest 5 minutes, then slice into 1/4" thin rounds. If pre-cooked, reheat gently in a skillet until warmed through and slice.

Wash and dry lettuce leaves. Stack leaves and cut in half if they are very large so they fit inside a rice paper wrapper. Remove any very thick central ribs if desired.

Strip cilantro and mint leaves from thick stems. Thinly slice cucumber into 2-3" matchsticks and very thinly slice shallot if using. Combine these components on a platter for assembly.

Crispy Wrap (non-GF component)

Prepare rice paper wrappers: heat 1/4–1/2" neutral oil in a heavy skillet over medium-high heat. To crisp a wrapper, briefly immerse a single rice paper in warm tap water for 2–4 seconds just to make it pliable (do not soak until floppy), then immediately lay it flat in the hot oil. It will blister, puff and crisp quickly — cook 15–45 seconds per side until golden and crisp. Remove with tongs and drain on paper towels. Repeat with remaining wrappers, keeping a low-medium heat to avoid burning. Note: frying rice paper produces a very crispy non-GF shell; for a gluten-free version, use softened rice paper without frying.

Alternative method (less oil): lightly brush dry rice paper with oil and place in a 375°F (190°C) oven on a silicone mat for 2–4 minutes to puff/crisp—watch closely as timing varies by brand.

Sweet Fish Dipping Sauce (contains fish sauce)

In a small bowl, combine warm water and palm sugar; stir until sugar dissolves. Add fish sauce, lime juice, minced garlic and finely chopped chile; taste and adjust balance. The sauce should be sweet-forward with a salty umami kick and a touch of acidity. If too salty, add 1–2 teaspoons more water or a little extra sugar; if too sweet, add a few drops more fish sauce or lime juice.

Assembly & Garnish

To assemble each spring roll: place one crispy rice paper round (or softened rice paper if serving GF) on a clean work surface. If using a crispy round, place a lettuce leaf first (this creates a barrier between filling and crispy wrap). Arrange 2–3 slices of sai oua, a small handful of cilantro, a few mint leaves, a small pinch of cucumber matchsticks and a few bean sprouts on top of the lettuce. Add a few thin shallot slices if desired.

Fold: bring bottom edge of wrapper up over the filling, fold sides in, then roll tightly away from you to close. If the wrapper is pre-crisped and brittle, assemble with lettuce as described to protect the crisp shell; handle gently. For softer rice paper rolls (GF), moisten wrapper fully in warm water first and assemble the same way.

Cut each roll in half on the bias and serve 2 halves per order. Serve immediately with the sweet fish dipping sauce and lime wedges on the side. Garnish plates with extra cilantro sprigs if desired.
