Prepare and measure all filling ingredients so assembly moves quickly.

Cook aromatics and pork

Heat a skillet or wok over medium-high heat and add 2 tsp vegetable oil. When hot, add minced garlic and ginger and stir for 20–30 seconds until fragrant. Add the ground pork and break up with a spatula; cook until no longer pink, about 3–4 minutes.

Add shrimp and vegetables

Add the chopped shrimp, shredded cabbage, grated carrot, and sliced green onions to the pork. Stir-fry 2–3 minutes until shrimp are opaque and vegetables have softened but are not soggy.

Season and bind

Lower heat to medium. Stir in 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp fish sauce, 1 tsp sugar, and 1/4 tsp white pepper. Mix well. In a small bowl, whisk the beaten egg with 1 tsp cornstarch, then pour into the filling and stir until the mixture is cohesive and slightly thickened, about 1 minute. Taste and adjust seasoning (add a little more soy or fish sauce if needed). Remove from heat and let cool to room temperature (about 15–20 minutes).

Set up an assembly station with wrappers, cooled filling, and a small bowl with the egg wash.

Assemble eggrolls

Place one wrapper on a clean surface in a diamond orientation (point toward you). Spoon about 2–3 tablespoons of cooled filling across the lower third of the wrapper, leaving a 1/2 inch border on each side. Fold the bottom point up over the filling, press to remove air, then fold the left and right sides toward the center. Brush the top corner with egg wash and roll tightly to seal. Repeat with remaining wrappers and filling. You should get about 8 eggrolls.

Place assembled eggrolls seam-side down on a tray and chill in refrigerator for 10 minutes to firm up (helps prevent unwrapping while frying).

Frying

Heat oil

Pour 3–4 cups neutral oil into a heavy-bottomed skillet or pot to a depth of about 1.5 inches. Heat oil over medium-high until it reaches 350°F (175°C) or until a small piece of wrapper sizzles immediately. If you do not have a thermometer, test with a wooden chopstick — bubbles should form steadily around it.

Fry eggrolls

Fry the eggrolls in batches (do not overcrowd) seam-side down first for 2–3 minutes, then turn occasionally until evenly golden brown, about 4–5 minutes per batch. Use tongs to turn carefully to avoid tearing wrappers. Maintain oil temperature between 330–360°F (165–180°C); reduce heat if browning too fast.

Drain

Remove eggrolls with a slotted spoon and drain on a wire rack or paper towels for 1–2 minutes to remove excess oil. Keep warm in a low oven (200°F / 95°C) if needed while frying remaining batches.

Sweet Fish Sauce (Noakeo-style Dipping Sauce)

Make the sauce

In a small saucepan, combine 1/4 cup water and 1/4 cup sugar. Heat gently, stirring, until the sugar dissolves to make a simple syrup. Remove from heat and stir in 1/2 cup fish sauce and 2 tbsp lime juice. Add 1 tsp minced garlic and the sliced chili (if using). Taste and balance: sauce should be sweet with a clear fish-salty backbone and bright lime acidity. If too salty, add 1–2 tbsp water; if too tart, add a little more sugar.

Let the sauce cool to room temperature, then transfer to a small serving bowl and garnish with shredded carrot.

To Serve

Arrange 2 eggrolls per order on a plate and serve hot with the sweet fish sauce on the side for dipping. Provide napkins — eggrolls are best eaten immediately for maximum crispness.
