Prepare aromatics

Peel and thinly slice the ginger into rounds. Smash and roughly chop the garlic cloves. In a medium saucepan, heat neutral oil over medium heat until shimmering. Add the sliced ginger and smashed garlic and sauté 1–2 minutes until fragrant but not browned.

Build the broth

Add the chicken or duck stock and 1 cup water to the saucepan with aromatics. Bring to a gentle simmer, then add garlic fish sauce, soy sauce, rice vinegar, brown sugar, sesame oil, white pepper, and salt. Taste and adjust seasoning — fish sauce provides savory umami, add up to 1 tbs more if needed. Simmer gently 8–10 minutes to let flavors meld.

Add duck

Add the shredded rotisserie-aged duck to the simmering broth to warm through for 2–3 minutes. If meat is very fatty, skim any excess fat from the surface with a spoon while it heats.

Cook the noodles

While broth simmers, bring a separate pot of water to a rolling boil. If using fresh egg noodles, cook 1–2 minutes until just tender; if dried, cook according to package (usually 4–6 minutes). Drain noodles and briefly rinse under hot water to remove surface starch and prevent sticking. Divide cooked noodles among bowls.

Combine and finish

Bring the broth back to a gentle boil and taste for final seasoning. If you like more brightness, squeeze 1/2 lime into the broth or add another 1/2 tsp rice vinegar. Ladle hot broth and duck over the noodles in each bowl so noodles are just submerged.

Blanch bok choy: Add the trimmed baby bok choy to the boiling noodle pot for 30–45 seconds until bright green and tender-crisp, then transfer to an ice bath or rinse under cold water to stop cooking. Drain and arrange on top of noodles.

Prepare garnishes: Slice green onions on a bias and roughly chop cilantro. If using bean sprouts, rinse and drain. Scatter green onions, cilantro, and bean sprouts over each bowl. If you like heat, drizzle chili oil or add fresh sliced chilies now.

Add final touches: Top bowls with crispy fried garlic or shallots and a small dollop of hoisin or chili sauce if desired. Serve with lime wedges on the side for squeezing.

Serve: Present immediately while hot. Encourage diners to toss noodles with broth and garnishes to combine flavors. Leftover broth will keep refrigerated 3–4 days.
