Method
Cocktail
Chill glass
Place a martini or coupe glass in the freezer for at least 5 minutes or fill with ice water while you prepare the cocktail to chill the glass.
Combine ingredients
In a cocktail shaker, add 2 oz vodka, 1 oz passion fruit juice, 0.75 oz lychee purée, 0.5 oz fresh lime juice and 0.25 oz simple syrup.
Add ice and shake
Fill the shaker with ice (about 1 cup) to the level of the liquid, secure the lid and shake vigorously for 12–18 seconds until the shaker is very cold. This chills and slightly dilutes the drink for balance.
Prep garnish
If using a passion fruit half, scoop about half of the seeds into a small bowl to float on the finished cocktail. If using a lychee, peel and pit it and set aside to skewer later.
Strain and serve
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne and fine mesh strainer (this removes ice shards and any fibrous bits from the purée).
Garnish
Gently spoon the reserved passion fruit seeds or a half teaspoon of pulp onto the surface of the cocktail so they float. Optionally skewer a lychee and rest it on the rim and add a mint sprig for aroma.
Serve
Serve immediately. Sip and enjoy the bright tropical flavors; the lychee purée adds sweetness and body while the passion fruit gives tartness and texture.
Optional prep notes
To make lychee purée from canned lychees: drain a 15 oz can of lychees, reserve 2–3 whole lychees for garnish, then blend the remaining lychees to a smooth purée. Strain if you prefer a smoother texture. Measure 0.75 oz for each cocktail.
To make passion fruit juice if using fresh: scoop pulp from ripe passion fruits and strain lightly to remove some seeds if you prefer less texture; reserve seeds for garnish.
