Prepare the Sauce

Chop the tomatoes and onion. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and sauté until translucent. Add the tomatoes, salt, and pepper. Cook for about 10 minutes until the mixture thickens slightly. Stir in chopped cilantro and set aside.

Cook the Ham

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced ham and cook until browned. Remove from the skillet and set aside.

Fry the Eggs

In the same skillet, crack the eggs and fry them to your liking (sunny side up or over easy). Season with salt and pepper.

Fry the Tortillas

In a separate skillet, lightly fry the corn tortillas in a little olive oil until crispy but still pliable.

Prepare Hashbrowns and Toast

Cook the hashbrowns according to package instructions. Toast the bread slices until golden brown.

Assemble the Dish

On each tortilla, layer the cooked ham, a fried egg, and spoon over the homemade sauce. Top with crumbled cheese, additional chopped onions, and cilantro.

Serve the huevos rancheros with a side of hashbrowns and toast. Enjoy!
