Prepare bread and roe

    Soak bread

    Tear the bread slices into pieces and place in a small bowl. Pour 60 ml cold water or milk over the bread and let soak until very soft, about 5–10 minutes. Squeeze out excess liquid and reserve the soft crumb.

    Check tarama

    If the tarama is in a packet and a bit dry, loosen it with a fork. Break it into small pieces so it blends evenly. Taste a tiny bit to judge saltiness and adjust later.

Blend base

    In a food processor or blender, combine the softened bread crumb and 120 g tarama. Pulse until the mixture forms a smooth paste, stopping to scrape down the bowl as necessary (about 30–45 seconds).

    Add the finely grated onion/shallot and optional garlic, then pulse 2–3 short times to incorporate.

Emulsify with oil and lemon

    With the processor running on low speed, slowly drizzle in the 80 ml extra-virgin olive oil in a thin, steady stream. Take about 2–3 minutes to add the oil so the mixture emulsifies and becomes creamy. Pause and scrape down sides if needed.

    Once the olive oil is incorporated and texture is smooth and airy, add 2 tablespoons lemon juice and pulse briefly to combine. If the mixture is very thick, add up to 30 ml cold water in small increments to reach a spreadable, silky consistency.

Season and adjust

    Taste the taramosalata. Season with white or black pepper and up to 1/4 teaspoon salt if needed (be cautious: tarama can be salty). If it tastes too sharp, add a drop more olive oil or a pinch more bread crumb; if too salty, add a little more bread crumb or a teaspoon of plain yogurt to mellow (optional).

    Blend briefly after any adjustments to fully incorporate.

Serve and garnish

    Spoon the taramosalata into a shallow bowl, smoothing the top with the back of the spoon. Create a shallow swirl and drizzle about 1 tablespoon extra-virgin olive oil over the surface. Sprinkle chopped parsley or dill if using, and serve with lemon wedges alongside warm pita, crusty bread, or raw vegetables.

    Taramosalata can be chilled, covered, for up to 2 days. Bring to near room temperature before serving for best flavor and texture.
