Prepare Chocolate

Chop and warm chocolate
Place the finely chopped bittersweet chocolate in a medium heatproof bowl. Set aside near the stove so it's ready when you finish the hot custard.

In a small bowl whisk the cocoa powder with the hot espresso (or coffee) to form a smooth chocolate paste; this helps disperse the cocoa without lumps. Set aside with the chopped chocolate.
Make Milk Custard

Heat milk and cream
In a medium saucepan combine the whole milk, heavy cream, and invert sugar (or corn syrup). Warm over medium heat until steam rises and small bubbles form around the edges (about 170–175°F / 77–80°C). Do not boil.

Whisk yolks with sugar
While the milk warms, whisk the large egg yolks with the granulated sugar and salt in a bowl until pale and slightly thickened (about 1–2 minutes).

Tempering
Slowly ladle about 1/2 cup of the hot milk mixture into the yolks while whisking constantly to temper. Repeat with another 1/2 cup to raise the yolks' temperature without scrambling.

Cook custard
Pour the tempered yolk mixture back into the saucepan with the remaining milk. Cook over low to medium-low heat, stirring constantly with a wooden spoon or silicone spatula and scraping the bottom, until the custard thickens and reaches 170–175°F (about 78–80°C) and coats the back of the spoon (draw a line with your finger and it holds). Do not let it boil.
Combine Chocolate and Custard

Immediately remove the saucepan from heat and pour the custard through a fine-mesh sieve into the bowl with the chopped chocolate and cocoa-espresso paste. Use a spatula to gently stir and allow residual heat to melt the chocolate for 1–2 minutes.

Emulsify
Stir gently but thoroughly until the chocolate is fully melted and the mixture is smooth and glossy. If necessary, place the bowl over a warm (not boiling) water bath and stir to finish melting and emulsifying.

Cool down
If the mixture is still warm, cool it quickly by setting the bowl in an ice bath and stirring until it reaches about 40–50°F (4–10°C). Alternatively, cover and refrigerate for at least 4 hours or overnight until fully chilled. Chilling improves texture and flavor melding.
Churn and Finish

Once the chocolate custard is thoroughly chilled, pour it into your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft‑serve, creamy consistency (typically 20–30 minutes).

Add mix‑ins (optional)
If using chocolate shavings or chips, fold them in during the last 3–5 minutes of churning so they are evenly distributed.

Harden
Transfer the gelato to a shallow, airtight container. Press a piece of parchment or plastic wrap directly on the surface to minimize ice crystals, cover, and freeze for at least 3–4 hours to firm up to scoopable texture.

When ready to serve, let gelato sit at room temperature for 2–5 minutes to soften slightly. Scoop into bowls or cones and optionally sprinkle a pinch of flaky sea salt on top to brighten flavors.
