Method

Prepare bananas

    Slice and freeze

    Peel the ripe bananas and slice them crosswise into 1/2-inch (1 cm) rounds. Spread the slices in a single layer on a parchment-lined baking sheet and freeze until solid, at least 2 hours (or overnight).

    Once frozen, transfer the banana slices to a zip-top bag or airtight container and keep in the freezer until ready to process.

Make gelato base

    Warm milk and sugar (optional — to dissolve sugar)

    In a small saucepan over low heat, warm the whole milk and granulated sugar just until the sugar dissolves and the mixture is warm (do not boil), about 3–4 minutes. Stir to dissolve evenly. Remove from heat and let cool to room temperature (or chill briefly).

    Assemble in blender or food processor

    Place the frozen banana slices into a high-speed blender or food processor. Add the cooled milk-sugar mixture, heavy cream, vanilla extract, and a pinch of fine sea salt. If using lemon juice to brighten flavor or banana liqueur/rum, add it now.

    Pulse to break up the frozen pieces, then blend continuously scraping down the sides as needed, until the mixture becomes very smooth and creamy — about 2–4 minutes in a high-speed blender (it will be soft-serve consistency). If the motor strains, pause, allow blades to settle, and resume or add a tablespoon of cream to loosen briefly.

Chill and churn

    Chill the mixture

    Transfer the blended banana gelato base into a bowl, cover, and refrigerate until thoroughly cold, at least 1 hour (or up to overnight). Chilling improves texture and helps the ice-cream machine work effectively.

    Churn

    Pour the chilled mixture into an ice cream machine and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, about 20–30 minutes depending on your machine.

    During the last 2–3 minutes of churning, add the chopped toasted nuts and/or crushed banana chips if using, to fold them in gently.

Freeze to set & serve

    Harden

    Transfer the churned gelato into a shallow, airtight container. Smooth the top, press a piece of parchment directly on the surface to minimize ice crystals, and close the lid. Freeze until firm enough to scoop, at least 2–4 hours (longer if you prefer a firmer scoop).

    Serve

    Remove the gelato from the freezer 5–10 minutes before scooping to soften slightly. Scoop into bowls or cups and garnish with additional crushed banana chips, toasted nuts, or a light drizzle of banana liqueur if desired.

    Store leftover gelato in the freezer for up to 2 weeks for best texture; allow to soften before serving.
