Remove the Chianti Classico Peppoli bottle from storage. Aim to serve at about 16–18°C (60–65°F). If stored at cellar temperature, bring to serving temperature by placing in the refrigerator for 20–30 minutes or in a cool place for 30–60 minutes. Avoid serving too warm (over 20°C) or too cold (under 14°C).

Inspect and chill

Use a waiter’s corkscrew to remove the foil and extract the cork carefully. Inspect the cork for any musty odors; a clean cork indicates the wine is likely free of cork taint.

Open the bottle

Chianti Classico Peppoli benefits from gentle aeration to reveal its intense red fruit, vanilla and chocolate notes. If the wine is younger (under 8–10 years), pour the entire bottle into a decanter and let it breathe for 20–45 minutes. For older vintages, decant carefully to separate sediment; pour slowly and stop when sediment reaches the neck.

Select large-bowled red wine glasses to concentrate aromas. Warm glasses as needed by rinsing with warm (not hot) water and drying; this helps the wine open up.

Choose glassware

Pour 120–150 ml (4–5 oz) per guest. Hold the glass by the stem and present the wine visually first (look for clarity and color intensity). Swirl gently to release aromas, then smell. Expect intense red fruit (cherry, raspberry), followed by delicate notes of vanilla and chocolate from oak aging.

Pouring and tasting

Serve with light Italian-style accompaniments such as sliced pecorino or parmesan, prosciutto, salami, and crusty bread. The wine pairs well with tomato-based pastas, grilled meats, and aged cheeses. Keep a water carafe on the table to cleanse the palate between sips.
