Prepare crabs
Pat cleaned softshell crabs dry with paper towels. Tuck legs neatly under bodies and lightly score the underside of each crab with a few shallow cuts so heat distributes evenly and prevents curling.

Season crabs: in a shallow dish combine 1 tsp sea salt, 1 tsp black pepper and 1/4 cup cornstarch. Dredge each crab lightly, shaking off excess. The cornstarch layer helps the batter cling.
Tempura Batter

Keep everything cold: place a bowl over a larger bowl filled with ice and set the mixing bowl on top, or keep the batter bowl in the refrigerator until ready to use. Cold ingredients and cold water produce a crisp, light tempura.

Make batter: in the chilled bowl whisk together 1 cup cake flour, 1/4 cup rice flour and 1/2 tsp baking powder. Lightly beat 1 cold egg and add 1 cup ice-cold sparkling water and 4 ice cubes (or keep water cold). Pour the liquid into the dry ingredients and stir very briefly with chopsticks or a fork — batter should be lumpy and slightly loose; do not overmix (overmixing develops gluten and weighs batter down). Keep batter over ice until frying.
Frying

Heat oil: in a deep saucepan or heavy pot heat neutral oil to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise to the surface steadily.

Fry crabs: remove a crab from dredge, shake off excess flour, dip into the cold tempura batter to coat evenly, allowing excess to drip off. Carefully slide into hot oil. Fry 2–3 crabs at a time (don't crowd) for 2.5–3.5 minutes, turning once, until batter is crisp and pale golden. Internal temperature of crab meat should be hot and opaque. Remove with a spider/skimmer and drain on a wire rack set over a sheet pan.

Keep warm: if necessary, keep fried crabs in a 200°F (95°C) oven on the wire rack for a few minutes while finishing remaining crabs — do not leave too long or they will lose crispness.
Kabayaki-style Glaze (Kimchi-Kabayaki)

Cook kimchi: in a small skillet over medium heat add 1 tbsp sesame oil (or a neutral oil if preferred) and 1/2 cup coarsely chopped kimchi. Sauté 1–2 minutes until kimchi releases aroma.

Add liquids and reduce: add 3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake and 1 tbsp brown sugar to the skillet. Stir to combine, bring to a light simmer and let the mixture reduce for 2–3 minutes so flavors concentrate. If using gochujang or sambal, whisk in 1 tsp now.

Finish glaze: mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry; whisk into simmering glaze and cook 30–45 seconds until slightly thickened and glossy. Remove from heat and stir in 1/2 tsp toasted sesame oil. Taste and adjust balance (add a pinch of sugar or splash of soy if needed). Keep warm.

Herb-Pickle & Garnish

Prepare herbs & aromatics: wash and dry Thai basil and mint leaves. Thinly slice 1 serrano chile on the bias and separate the white and green parts of 2 scallions; reserve whites for garnish if desired.

Assemble garnish: on a serving platter arrange a bed of basil and mint leaves. Place glazed tempura crabs on top. Sprinkle with thinly sliced serrano, scallion greens, toasted sesame seeds and shredded nori if using. Serve with lime wedges for squeezing over the crabs.

Optional dipping sauce: combine 1/4 cup ponzu, 1/2 tsp toasted sesame oil and thinly sliced serrano to taste. Serve on the side for contrast to the kimchi glaze.
