Prepare glass

Chill a double old-fashioned glass or a tiki-style glass by filling with ice and set aside while you build the drink.

Combine ingredients

In a cocktail shaker, add the house rum blend #1 (2 oz), peach liqueur (0.75 oz), pineapple juice (2 oz), orgeat (0.5 oz) and fresh lime juice (0.5 oz). If you prefer a slightly sweeter drink, add 0.25 oz simple syrup.

Add ice and shake

Fill the shaker two-thirds with ice (large cubes are fine). Secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Prepare serving glass

Discard the ice used to chill the glass and pack the glass with crushed ice (about 1 cup).

Strain

Double-strain the shaken cocktail over the crushed ice in the prepared glass to remove small ice shards and any pulp.

Finish and garnish

Optionally add 1 dash of Angostura bitters over the top for aromatic depth. Garnish with a lime wheel or wedge and a sprig of mint. Serve with a short straw or swizzle stick.

Notes

House rum blend #1 can be any blended rum mix suggested by the bar; adjust rum quantity between 1.5–2.5 oz to taste. Orgeat adds almond richness—if you lack orgeat, a small amount (0.25 oz) of almond syrup may be used but reduce if overly sweet.
