House Rum Blend
Build & Shake
Add light rum (2 oz), dark aged rum (1 oz), peach liqueur (0.75 oz), pineapple juice (2 oz), fresh lime juice (0.5 oz), orgeat (0.5 oz), and simple syrup (0.25 oz) into a cocktail shaker filled halfway with ice. If using, add 2 dashes of Angostura bitters. Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Prepare Glass
Fill a highball or double old-fashioned glass with crushed ice (about 1 cup) to the top.
Strain & Serve
Double-strain (or strain) the shaken cocktail over the prepared glass of crushed ice. This will help keep small ice shards out and ensure a smooth texture.
Garnish
Garnish with a pineapple wedge and a lime wheel on the rim. Optionally slap a mint sprig between your hands to release aroma and tuck it beside the garnish. If desired, finish with a light grate of fresh nutmeg or an extra dash of bitters on top for aromatic complexity.
Serve immediately with a short straw. Estimated alcohol strength is lively — enjoy responsibly.
