Ensure the rice is cooked and cooled. Leftover rice works best, as it helps to prevent the dish from becoming mushy.

Chop the Vegetables

Dice the carrots and bell peppers. Chop the green onions and set aside.

If using chicken, shrimp, or tofu, ensure they are cooked and ready to add to the fried rice.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Stir-fry the Vegetables

Add the diced carrots, bell peppers, and green peas to the skillet. Stir-fry for about 3-4 minutes until they are tender but still crisp.

Add Garlic and Ginger

Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.

Incorporate the Rice

Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.

If using chicken, shrimp, or tofu, add it now and mix well with the rice and vegetables.

Pour in the soy sauce and sesame oil, stirring to coat the rice evenly. Season with salt and black pepper to taste.

Add the chopped green onions, and stir to combine. Cook for another minute until everything is heated through.
