Prepare seafood and vegetables

Pat shrimp dry and chop into bite-sized pieces if needed. Drain cooked crawfish tails. Slice mushrooms, dice tomato (remove seeds to avoid excess moisture), mince garlic, slice green onion, and grate the cheddar. Dice potato into 1/2-inch cubes and finely dice the onion for the potatoes.

Preheat oven to warm setting (about 200°F / 95°C) to keep finished omelet warm if serving immediately.

Breakfast Potatoes (or Grits)

Heat 1 tablespoon oil in a medium skillet over medium-high heat. Add diced potatoes in a single layer if possible; let cook undisturbed 4–5 minutes to form a crust. Stir in the 1/4 cup diced onion, season with salt, pepper and 1/4 teaspoon paprika. Continue to cook, stirring occasionally, until potatoes are tender and golden, about 10–12 minutes total. Keep warm in the oven while you make the omelet.

Grits alternative

If using grits instead, bring 1 cup water or milk to a boil in a small saucepan. Stir in 1/2 cup quick grits and a pinch of salt. Reduce heat to low and cook, stirring, until thickened (about 3–5 minutes). Remove from heat and stir in 1 teaspoon butter. Cover and keep warm.

Seafood Filling

Melt 1 tablespoon butter in a nonstick skillet over medium heat. Add the minced garlic and sliced mushrooms and sauté 2–3 minutes until mushrooms release moisture and begin to brown. Add the chopped shrimp and cook 2–3 minutes until shrimp turn pink and are just cooked through. Add crawfish tails and diced tomato; cook 1 minute to heat through and for flavors to meld. Season with salt, black pepper and 1/4 teaspoon paprika. Stir in sliced green onion (if using). Transfer the cooked seafood mixture to a bowl and set aside.

Eggs & Omelet Assembly

In a bowl, whisk together 3 large eggs, 2 tablespoons milk or half-and-half, and a pinch of salt and pepper until frothy and uniform.

Heat a 9–10 inch nonstick skillet over medium-low heat. Add 1 tablespoon butter and swirl to coat the pan. Pour the beaten eggs into the pan and let them sit undisturbed for about 20–30 seconds until edges begin to set.

Using a spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this gentle motion until the surface is mostly set but still slightly moist on top, about 1–2 minutes total.

Spread the reserved seafood filling evenly across one half of the omelet, then sprinkle the 1/2 cup grated cheddar over the filling.

Using the spatula, carefully fold the empty half of the omelet over the filling. Let cook 30–60 seconds more so the cheese melts and the center finishes cooking but remains tender. Avoid overcooking; internal texture should be creamy, not dry.

Slide the omelet onto a warm plate, keeping the fold on the bottom. Garnish with chopped parsley or chives and a grind of black pepper. Serve immediately with two slices of toasted bread (buttered) and a portion of breakfast potatoes or grits.

Toast

Toast 2 slices of white or wheat bread to desired darkness and spread with 1 teaspoon butter. Serve alongside the omelet.

Serving & Notes

Portion: one omelet per serving. Offer hot sauce or cocktail sauce at the table. If preparing multiple omelets, keep finished omelets on a rimmed baking sheet in a 200°F oven while cooking remaining omelets to maintain temperature without overcooking.

All ingredients in the filling and sides correspond to directions above. Adjust salt, pepper, and paprika to taste. For larger shrimp or whole pieces, increase cook time slightly to ensure shrimp are opaque and cooked through.
