Oysters
Clean oysters
Rinse the oysters under cold running water, scrubbing shells with a stiff brush to remove debris. Discard any with cracked shells or an off smell.
Prepare serving bed
Spread crushed ice evenly across a shallow serving tray or large platter to create a stable bed for the oysters. Pat the oysters dry and nestle them cup-side down on the ice so shells remain stable.
Shuck oysters
Working one at a time with a towel or glove on the hand holding the oyster, insert an oyster knife at the hinge and twist gently to pop it open. Run the knife along the top shell to sever the muscle and remove the top shell. Slide the knife under the oyster to free the bottom muscle but keep the oyster in its bottom shell and retain the liquor. Place each shucked oyster on the ice immediately to keep cold.
Mignonette
Make mignonette
In a small bowl combine the finely minced shallot, red wine vinegar, champagne vinegar, freshly cracked black pepper, kosher salt, and sugar (if using). Stir to dissolve the salt and sugar. Taste and adjust acidity or seasoning; the mignonette should be bright and slightly tangy. Refrigerate until ready to serve.
Spoon a small amount (about 1/2 tsp) of mignonette onto each oyster just before serving, or serve the mignonette in a small bowl alongside so guests can add to taste.
Lemon-Garlic Butter (optional warm accompaniment)
Warm butter
In a small saucepan over low heat, melt the unsalted butter gently. Add the minced garlic and cook for 30–45 seconds until fragrant but not browned. Remove from heat and stir in lemon zest, chopped parsley, and a pinch of salt. Keep warm but do not boil. Serve in a small warmed bowl for dipping or drizzling over oysters if you prefer a warm, buttery option.
Garnishes & Serving
Serve immediately while oysters are cold and fresh. Discard any oysters that do not close before shucking or that have an off odor.
