Chill everything
Place sparkling wines (and non-alcoholic sparkling) and all juices in the refrigerator at least 2–3 hours ahead so everything is icy cold. Cold components preserve fizz and taste.
If you want sugared rims: pour sugar onto a shallow plate and moisten the rim of each glass by dipping in water or simple syrup, then dip in sugar. Let rims dry upright for a few minutes.
Mixing the Mimosas
Classic ratio
For each mimosa, combine roughly 3 parts chilled sparkling wine to 1 part fresh orange juice. Example: pour 4–5 oz (120–150 ml) sparkling wine and top with 1–1.5 oz (30–45 ml) orange juice. Fill gently to preserve bubbles.
Alternate styles
Bellini-style: replace orange juice with 1–2 tablespoons peach nectar or purée per glass, then top with sparkling wine. Blood orange or grapefruit: substitute all or part of the orange juice with blood orange or grapefruit juice for a brighter flavor and color.
Add modifiers if desired
If guests like sweeter drinks, add up to 1 teaspoon simple syrup per glass. For a boozy orange accent, add 1/2 teaspoon Grand Marnier or Cointreau per glass. A small dash of fresh lemon juice (1/4 tsp) can balance very sweet juices.
Serving & Replenishing
To serve: pour sparkling wine into the chilled glass first about 3/4 full, then gently add juice so it mixes without excessive foam. Garnish with an orange slice, strawberry half, or mint sprig as desired.
For bottomless service: keep bottles on ice and replenish juices and sparkling wine regularly. Assign a host or bartender to refresh carafes and monitor glassware. Offer the non-alcoholic sparkling option and extra juice for guests who prefer it.
Safety note: encourage pacing and provide plenty of water and food. Limit continuous top-ups to reasonable amounts if you're hosting a group to avoid overconsumption.
Cleanup & Storage
Keep opened sparkling bottles sealed with stoppers between fills to maintain carbonation. Store leftover juices in airtight containers in the refrigerator for up to 48 hours; discard if off-smelling.
