Prepare the meat
Place the ground beef in a large bowl. Add kosher salt, freshly ground black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands just until combined — avoid overworking to keep patties tender.

Portion and shape
Divide the meat into 4 equal portions (about 4 oz each if 1 lb total). Form each portion into a round patty about 3/4-inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent puffing during cooking.

Preheat pan or grill
Heat a cast-iron skillet or grill to medium-high. If using a skillet, add 1 tablespoon vegetable oil and heat until shimmering.

Cook the patties
Place patties on the hot skillet or grill. Cook undisturbed for 3-4 minutes until a brown crust forms. Flip and cook another 3 minutes for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan or close the grill lid to melt the cheese.

Rest
Transfer cooked patties to a plate and let rest for 3 minutes to redistribute juices.

Prepare vegetables
While patties cook, slice the tomato into 1/4-inch slices and thinly slice the red onion. Rinse and pat dry the lettuce leaves.

Mix condiments
If desired, combine mayonnaise and mustard for a quick sauce, or keep condiments separate. Place ketchup in a small dish or squeeze bottle for serving.

Assemble burgers
On the bottom half of each toasted bun, spread about 1 tablespoon mayonnaise (or mayo-mustard mix) and 1 tablespoon ketchup. Add a lettuce leaf, a tomato slice, and 2 pickle slices. Place the cheeseburger patty on top, add a few slices of red onion, and top with the bun crown. Repeat for each burger.

Serve burgers immediately with extra condiments on the side and optional fries or a salad.
