Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill with ice water to chill while you prepare the cocktail (5 minutes).

Mixing

Combine the whisky, Génépy (or yellow Chartreuse), fresh lime juice, honey syrup, ginger liqueur, bitters, and aquafaba (or egg white) into a cocktail shaker.

Dry shake (no ice) vigorously for 20–30 seconds to emulsify the egg white/aquafaba and build a good foam. This step is important for a silky texture and to incorporate the aromatic bitters.

Add a handful of fresh ice to the shaker and shake again vigorously for another 15–20 seconds to properly chill and dilute the cocktail.

Strain & Finish

Discard ice or remove the chilled glass from the freezer. Double-strain the cocktail into the chilled coupe/Nick & Nora using both the shaker strainer and a fine mesh strainer to ensure a smooth foam and remove any ice shards.

Garnish with a thin slice of candied ginger or candied orange peel laid across the foam and a lime wheel on the rim. Optionally, lightly grate nutmeg or a pinch of ground ginger over the foam for extra aroma.

Serve immediately. Sip slowly to appreciate the interplay of warm whisky, herbal Génépy, bright lime, and sweet-spicy ginger notes.
