If using imitation crab: chop the crab into small pieces (about 1/4-inch). If using lump crab, pick through to remove shells and shred gently into small pieces. Measure 8 oz total.

In a medium bowl, combine the softened cream cheese and chopped crab. Use a fork to mash and mix until mostly smooth with small crab pieces remaining.

Add the finely sliced green onions, 1 tsp soy sauce, 1 tsp garlic powder, 1 tsp ground ginger, 1 tsp sesame oil, 1 tsp sugar, 1 tsp salt, and 1/4 tsp black pepper. Stir thoroughly until evenly incorporated. Taste and adjust seasoning (a little extra soy or salt) if desired.

Cover the bowl and refrigerate the filling for at least 15 minutes to firm up slightly, which makes spooning and sealing easier.

Wrappers & Assembly

Prepare an assembly area: a small bowl with the egg wash (beat the egg with 1 tsp water), a clean work surface or cutting board for wrappers, and a small spoon or 1-tsp cookie scoop for portioning filling.

Lay one wonton wrapper flat. Place about 1 teaspoon of the chilled crab filling in the center (do not overfill; about 1 tsp for small wrapped shapes or up to 1.5 tsp if using all filling).

Brush the edges of the wrapper lightly with the egg wash. Fold the wrapper into your preferred shape: for the classic triangle, fold diagonally to form a triangle and press edges to seal, ensuring no air is trapped; for the fortune cookie/purse shape, bring opposite corners together and pinch to seal. Make sure all seams are tightly sealed to prevent filling leakage.

Place assembled Rangoon on a plate or baking sheet lined with parchment. Repeat with remaining wrappers and filling. If the wrappers dry out while assembling, cover them with a damp towel.

Frying

Pour oil into a deep, heavy-bottomed skillet or pot to a depth of about 1.5–2 inches (roughly 2–3 cups depending on vessel). Heat oil over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and float up steadily without browning instantly.

Working in small batches (6–8 pieces depending on pot size), carefully lower Rangoon into the hot oil using a slotted spoon or spider. Do not overcrowd; crowding lowers oil temperature and makes them greasy.

Fry for about 1.5–3 minutes, turning occasionally, until wrappers are golden brown and crisp. Adjust heat as needed to maintain a steady 325–350°F; if oil is too hot, they will brown too quickly before filling heats through.

Use a slotted spoon to transfer fried Rangoon to a wire rack set over a baking sheet or to paper towels to drain excess oil. Let rest 1–2 minutes; they will crisp further as they cool slightly.

Repeat frying with remaining Rangoon. If keeping warm, maintain in a 200°F (95°C) oven on a rack so bottoms stay crisp.

Dipping Sauce (optional)

For a simple sauce, stir together 1/2 cup sweet chili sauce with 1 tsp soy sauce and 1/2 tsp rice vinegar. Taste and adjust balance (more soy for saltiness, more vinegar for tang, or extra chili for heat).
