Prepare cauliflower

Cut 1.5 lbs of cauliflower into bite-sized florets (about 1–1½ inches). Pat dry with paper towels to remove excess moisture so batter adheres.

Make batter

In a large bowl whisk together 1 cup gluten-free flour blend, 1/2 cup cornstarch, 1/2 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Gradually whisk in 1 cup cold sparkling water until you have a thick, slightly lumpy batter that coats the back of a spoon. The carbonation helps produce a light crust—do not over-mix.

Heat oil

Pour 4 cups neutral oil into a deep skillet or medium pot (enough for 1½–2 inches depth) and heat over medium-high until it reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a little batter—if it sizzles and rises steadily, it’s ready.

Coat & fry

Working in 2 batches to avoid crowding, toss cauliflower florets in the batter to thoroughly coat, letting excess drip off. Carefully lower pieces into the hot oil and fry, turning as needed, until golden and crisp, about 3–4 minutes per batch. Remove with a slotted spoon to a wire rack or paper towel-lined tray to drain. Maintain oil temperature between 325–350°F; let oil come back up to temperature between batches.

Combine sauce ingredients

While the cauliflower fries, combine 1/2 cup honey, 2 tbsp Sriracha, 2 tbsp brown sugar, 1 tbsp soy sauce (or tamari), 1 tbsp rice vinegar, 1 tbsp lime juice, 1 tsp minced garlic, and 1/2 tsp sesame oil in a small saucepan. Stir to combine.

Simmer & thicken

Bring the sauce to a gentle simmer over medium-low heat for 2 minutes. Mix 1 tsp cornstarch with 1 tsp water to make a slurry and whisk it into the simmering sauce. Cook another 30–60 seconds until sauce thickens to a glossy, coat-able consistency. Taste and adjust heat or sweetness (add more Sriracha for heat or a dash more honey for sweetness). Remove from heat.

Finish & Garnish

Toss cauliflower in sauce

Place the fried cauliflower in a large mixing bowl. Pour the warm sweet heat sauce over the cauliflower and gently toss until every piece is evenly coated. Work quickly so the cauliflower stays crisp but gets sauced.

Plate & garnish

Transfer the sauced cauliflower to a serving platter. Sprinkle with 1 tbsp toasted sesame seeds and 2 tbsp thinly sliced green onions. Garnish with 2 tbsp chopped cilantro if using and serve with lime wedges on the side for squeezing over.

Serving suggestion

Serve immediately while hot and crisp as a snack or shareable. Leftovers can be reheated in a 400°F oven for 6–8 minutes to restore crispness, but texture will be best fresh.
