Base
Preheat and prepare corn
Preheat a grill or grill pan to medium-high heat (about 425°F / 220°C). Toss the shucked corn kernels with the unsalted butter, vegetable oil, kosher salt, and black pepper in a bowl until evenly coated.
Grill the corn kernels
Spread the seasoned corn in a single layer on a heavy cast-iron skillet, grill pan, or a disposable aluminum tray placed on the grill. Grill, stirring or shaking occasionally, until kernels are charred in spots and softened, about 8–10 minutes. Remove from heat and let cool slightly.
Arrange chips
On a large serving platter or sheet pan, arrange the fresh corn tortilla chips in an even layer to form the base for the nachos.

Add chips and cheeses
Immediately after grilling, spoon the warm charred corn evenly over the tortilla chips. Scatter the shredded cheddar (if using) over the chips and corn. Distribute the crumbled queso fresco evenly over the top. This allows the warm corn and optional cheddar to soften and slightly melt the cheeses.
Add Hot Cheetos
Lightly crush the Flamin' Hot Cheetos in a zip-top bag or by hand and sprinkle the crushed Cheetos evenly over the layered chips, corn, and cheese to add bright crunchy heat.
Queso Pico (fresh queso with pico flavors)
Make the queso pico
In a medium bowl, beat the softened cream cheese until smooth. Stir in the sour cream (or crema) until fully combined and silky. Fold in the diced tomato, red onion, chopped cilantro, lime juice, salt, and ground cumin. Taste and adjust seasoning with more lime or salt as needed. The mixture should be spreadable but still chunky.
Apply queso pico
Using a spoon, dollop the queso pico evenly over the nachos in several spots, then gently spread with the back of the spoon for even coverage while keeping some peaks for texture.
Chipotle Aioli
Make chipotle aioli
In a small bowl, whisk together the mayonnaise, minced chipotle pepper, adobo sauce, lime juice, grated garlic, and 1/2 tsp salt until smooth and emulsified. Taste and adjust chipotle/adobo for desired heat.
Drizzle aioli
Transfer the aioli to a squeeze bottle or spoon and drizzle generously and evenly over the assembled nachos in a zig-zag pattern.
Garnish & Serve
Finish and garnish
Sprinkle the chopped cilantro and the extra crumbled queso fresco over the nachos. Place lime wedges on the side for squeezing. If desired, add a few extra whole Hot Cheetos on top for presentation.
Serve
Serve immediately while chips are crisp and corn is warm. Encourage guests to squeeze lime over individual servings. Leftovers are not recommended as chips will soften.
