Method
Espresso-based Drinks (Classic Cappuccino / Latte / Flavored Latte)
Pull espresso
Grind fresh espresso beans to a fine consistency and dose for a double shot (about 18–20 g). Tamp evenly and pull a double shot (2 oz) into your cup. Aim for a 25–30 second extraction.
Steam milk
Pour 6 oz whole milk (or oat milk) into a chilled metal pitcher. Purge the steam wand, submerge tip just below surface and introduce air for 3–4 seconds to create microfoam, then lower wand to heat milk to 140–150°F (60–65°C). For cappuccino, produce more foam (about 2 oz foam). For latte, create silkier microfoam with minimal air.
Flavoring (optional)
If making a flavored latte, add 1 tbs vanilla syrup or 1 tbs brown sugar cinnamon syrup into the serving cup before pouring espresso. Stir lightly to combine. For honey, warm 1 tsp and mix into espresso for better dissolution.
Assemble
Pour the double shot of espresso over the syrup (if using). Slowly pour steamed milk into the espresso, holding back foam with a spoon for a latte, or allow foam to flow for a cappuccino. Finish with 2 oz of foamed milk on top for a cappuccino. Dust with 1 tsp cacao powder or grate cinnamon over the foam for garnish. Serve immediately.
Cleaning note
Purge and wipe the steam wand with a damp cloth and purge again. Rinse portafilter and flush group head if using a machine.
Cold Brew & Iced Coffee Variations
Prepare cold brew (if not premade)
Coarsely grind coffee and steep at a 1:4 coffee-to-water ratio by weight (e.g., 200 g coffee to 800 g cold filtered water) in the refrigerator for 16–20 hours. Strain through a fine mesh and a coffee filter to yield concentrate. For this recipe use 4 oz cold brew concentrate.
Make iced coffee or iced latte
Fill a glass with 1 cup ice. Pour 4 oz cold brew concentrate over the ice. For an iced latte, add 6 oz cold milk or oat milk. Stir gently. Add 1 tbs vanilla syrup or 1 tbs brown sugar cinnamon syrup if desired and stir to combine. Garnish with a cinnamon stick if using.
Cold brew black (simple)
For a black cold brew, dilute 4 oz cold brew concentrate with 4–6 oz cold filtered water to taste. Serve over ice and enjoy without dairy or syrups.
Fresh Drip / Black Coffee
Brew
Brew 8 oz of fresh drip coffee using medium grind and hot water at 195–205°F (90–96°C). Use a 1:15–1:17 coffee-to-water ratio by weight (for 8 oz, ~15–18 g coffee).
