Make the mac sauce
In a small bowl combine mayonnaise (or vegan mayo), ketchup, yellow mustard, sweet pickle relish, paprika, garlic powder, onion powder, lemon juice (or vinegar) and a pinch of salt. Whisk until smooth and taste; adjust ketchup or relish for sweetness or lemon for brightness. Refrigerate until assembly (at least 5 minutes).

Prepare patty
If using frozen Impossible patty, thaw slightly so it can be smashed (about 10–15 minutes at room temperature). Divide into a loosely packed 4–4.5 oz ball if larger, pat into a loose ball and season one side with about half the salt and pepper.
Sear and smash
Place the seasoned ball on the hot surface seasoned-side down. Using a heavy spatula or a burger press (and a second spatula for leverage if available), press down firmly to make a thin patty roughly the diameter of the bun. Hold the smash for 10–15 seconds to ensure contact. Cook without moving for 2–2.5 minutes until the edges brown and a crust forms.
Flip and finish
Flip the patty and immediately season the cooked top with the remaining salt and pepper. Place the cheese slice on the patty (if not vegan/no cheese) and cook 1–1.5 minutes more until cheese melts and patty is cooked through but still juicy. Total cook time ~3.5–4 minutes.
Assemble
Spread about 1 1/2 tablespoons of mac sauce on the bottom bun. Place the finished patty with melted cheese on top of the sauce. Add tomato slices, pickle slices, then a light smear (about 1/2 tsp) of mac sauce on the top bun. Close burger and serve immediately.
Vegan variation
For the vegan option: use vegan mayo in the mac sauce (or an oil-based alternative), omit the cheese (or use vegan cheese), and swap brioche for sourdough. Follow the same cooking and assembly steps.
