Method
Vanilla-Berry Sparkler
Prepare simple syrup (if you don't have it)
Combine 1/2 cup sugar and 1/2 cup water in a small saucepan with one split vanilla bean. Heat until sugar dissolves, cool, remove bean, and store. Use 3/4 oz per cocktail.
In a shaker, add vodka, vanilla bean simple syrup, blackberry purée, and fresh lemon juice. Add ice.
Shake vigorously for 10–12 seconds until well chilled and slightly frothy.
Double-strain into a chilled flute or coupe (to remove seeds) leaving space for Prosecco.
Top with Prosecco (about 3 oz). Gently stir once with a bar spoon to integrate without losing too much fizz.
Garnish with three fresh blackberries on a pick and a lemon twist. Serve immediately.
Salted Caramel Espresso Martini
In a cocktail shaker, combine cold vodka, coffee liqueur, cooled freshly brewed espresso, and salted caramel syrup. Add ice.
Shake vigorously for 15–20 seconds to create a creamy texture and good crema from the espresso.
Double-strain into the chilled glass.
Gently float the lightly shaken heavy cream on top by pouring over the back of a spoon to create a layered look.
Sprinkle a pinch (about 1/4 tsp) of flaky sea salt across the cream and garnish with three espresso beans centered on the foam. Serve immediately.
Rose-Pistachio Cream
In a shaker, add gin (or vodka), rose syrup, pistachio orgeat, fresh lemon juice, and aquafaba (if using). Do a dry shake (no ice) vigorously for 15 seconds to develop foam.
Open the shaker, add ice, and shake again for 10–12 seconds to chill.
Double-strain into the prepared coupe to achieve a silky texture. Allow foam to settle into a nice head.
Garnish with a light sprinkle of dried rose petals and a few crushed pistachio pieces on the foam. Serve immediately.
Chocolate-Chile Affogato Cocktail (served in coupe)
Preheat or warm a small metal pitcher or cup for the espresso so it remains hot when poured.
In a mixing glass, combine dark rum, chocolate liqueur, and chili-infused simple syrup. Stir with ice briefly to chill and integrate (about 10 seconds), then strain over the ice cream.
Pour the very hot espresso over the ice cream so it melts slightly — this creates an affogato-like texture.
Dust lightly with cocoa powder and sprinkle a tiny pinch (about 1/8 tsp) of fine chile flakes on top for a gentle heat contrast. Serve immediately with a small spoon.
