Method
Vanilla Bean Ice Cream Base
Warm dairy and infuse vanilla
In a medium saucepan, combine 1 cup whole milk, 2 cups heavy cream, and 3 tablespoons granulated sugar. Split the vanilla bean lengthwise and scrape the seeds into the pan (or add 1 teaspoon pure vanilla extract). Add the pod as well if using the bean. Warm over medium heat until steam appears and edges begin to bubble, stirring occasionally, about 5–7 minutes. Do not boil.
Tempering the eggs
While the milk mixture warms, whisk 4 large egg yolks in a medium bowl until slightly thickened. Slowly ladle about 1/3 cup of the warm dairy into the yolks while whisking vigorously to temper. Repeat with another 1/3 cup until the yolks are warmed.
Cook custard
Pour the tempered yolks back into the saucepan with the remaining dairy. Cook over low–medium heat, stirring constantly with a wooden spoon or heatproof spatula and scraping the bottom, until the mixture thickens slightly and coats the back of the spoon (170–175°F / 77–80°C), about 3–6 minutes. Do not let it boil.
Finish custard
Remove from heat. If you used a vanilla bean pod, discard it. Stir in 1 teaspoon fine sea salt. Pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits. Add 1 tablespoon unsalted butter (optional) and 1 teaspoon vanilla extract now if you used extract earlier. Cool slightly, then cover the surface with plastic wrap and chill in the refrigerator until cold, at least 3 hours or overnight.
Brown Butter Bourbon Swirl
Brown the butter
While the custard chills, melt 6 tablespoons unsalted butter in a small skillet over medium heat. Swirl frequently; the butter will foam, then the milk solids will brown and smell nutty. This takes 4–6 minutes. Remove from heat as soon as it's golden brown to avoid burning.
Make swirl
Immediately add 1 tablespoon dark brown sugar and 2 teaspoons bourbon (optional) to the warm brown butter, stirring until the sugar dissolves. Add 2 tablespoons heavy cream and 1 teaspoon sea salt, stirring to combine. Let the mixture cool to room temperature, then chill in the fridge until slightly thickened but still pourable (about 20–30 minutes).
Candied Pecans & Crunch
Candy the pecans
Preheat oven to 350°F (175°C). Line a baking sheet with parchment. In a small skillet over medium heat, melt 1 tablespoon unsalted butter with 2 tablespoons granulated sugar until the sugar begins to dissolve and turn golden, about 2–3 minutes. Add 1 cup pecan halves and 1/2 teaspoon fine sea salt, stirring to coat. Spread the coated pecans in a single layer on the prepared baking sheet and bake 6–8 minutes until toasted and crisp. Let cool; chop roughly if desired.
Citrus Honey Drizzle (optional)
Combine 3 tablespoons honey, 1 teaspoon fresh lemon juice, and 1/2 teaspoon orange zest in a small bowl. Warm for 10–15 seconds in the microwave or in a small saucepan to loosen the honey and blend flavors. Set aside at room temperature.
Freeze and Assemble
Churn the ice cream
When the custard is fully chilled, churn it in an ice cream maker according to the manufacturer's instructions until soft-serve consistency is reached (typically 20–30 minutes).
Layer with swirl and pecans
Spoon one-third of the churned ice cream into a freezer-safe loaf pan or container. Drizzle with about half of the chilled brown butter bourbon swirl (ribbons, not fully mixed). Sprinkle with a third of the candied pecans. Repeat layering once more: another third of ice cream, remaining swirl, another third of pecans. Top with the final ice cream layer and remaining pecans. Use a knife to gently marble the swirl through the top layer if desired, taking care not to fully mix.
Firm up
Cover the container with a lid or plastic wrap and freeze until firm, at least 4 hours or overnight for scoopable texture.
