Method
Potato & Veggie Smash
Cook the potatoes and carrots
Place peeled and chopped potatoes and carrots in a large pot and cover with cold water by 2 cm. Add 1/2 teaspoon salt. Bring to a boil over high heat, then reduce to a simmer and cook until very tender, about 12–15 minutes. Drain thoroughly and return to the hot pot for 1 minute to evaporate excess moisture.
Sauté aromatics
While the potatoes cook, heat a small skillet over medium heat with 1 tablespoon oil (from the frying oil container). Add the diced yellow onion and cook, stirring occasionally, until translucent and beginning to brown at the edges, about 6–8 minutes. Add the minced garlic and cook 30 seconds more until fragrant. Remove from heat.
Mash and season
Place the drained potatoes and carrots in a large bowl. Mash coarsely with a potato masher or fork until mixture holds together but still has texture. Stir in the cooked onion and garlic, chopped cilantro, sliced green onions, curry powder, cumin, coriander, turmeric, 1 teaspoon salt, and black pepper. Taste and adjust seasoning (reserve remaining 1/2 teaspoon salt for mixture if needed).
Bind the mixture
Let the mash cool slightly (5 minutes). Stir in the beaten egg and 3/4 cup flour, mixing until evenly combined. The mixture should be moist but hold shape when formed into a ball. If too wet, add up to 2 tablespoons more flour; if too dry, add 1 tablespoon water or another beaten egg.
Form the pups
Using wet hands, portion the mixture into 18–22 small oval 'pups' about 1.5–2 tablespoons each. Press each into a compact shape so they don't fall apart. Place on a tray and chill in the refrigerator 15–20 minutes to firm (this helps them hold together during frying).
Breading & Frying
Set up a breading station with the 1/2 cup flour in one shallow bowl, the chilled pup mixture in a tray (you can brush each with the remaining beaten egg if you like), and the panko breadcrumbs in another shallow bowl.
Lightly dust each formed pup in flour, tapping off excess, then dip/brush with remaining beaten egg (if reserved) or lightly wet with water, and press into panko breadcrumbs to coat evenly. For a crispier crust, double-coat: flour → egg → panko → egg → panko.
Fry the pups in batches (do not overcrowd) for 2–3 minutes per side, turning gently with a slotted spoon or tongs, until golden brown and heated through. Total fry time will be about 4–6 minutes per batch depending on size. Adjust heat to maintain oil temperature around 160–175°C (320–350°F).
Transfer fried pups to a paper-towel-lined tray and season lightly with a pinch of salt. Keep warm in a 90–100°C (200°F) oven if frying multiple batches.
Mango Dipping Sauce
Combine the diced ripe mango, lime juice, honey, red chili flakes (or chopped fresh chile), rice vinegar, and 1/4 teaspoon salt in a blender or food processor. Add 2 tablespoons water to start.
Blend until smooth. Taste and adjust balance: add more honey for sweetness, more lime for acidity, or more water to reach desired dipping consistency (thin but clingy). If you prefer a textured sauce, pulse briefly instead of fully pureeing.
Transfer sauce to a small bowl and refrigerate until serving. Stir in a pinch of chopped cilantro if desired.
Serve
Arrange the hot curry spud puppies on a platter with the mango dipping sauce on the side. Garnish with lime wedges and extra cilantro leaves. Serve immediately while hot and crispy.
