Waffles
Preheat and dry ingredients
Preheat waffle iron according to manufacturer instructions. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.
Wet ingredients
In a separate bowl whisk buttermilk, eggs, melted butter, and vanilla until smooth.
Combine batter
Pour wet into dry and gently fold until just combined; a few small lumps are fine. Let batter rest 5 minutes to hydrate and thicken slightly.
Cook waffles
Brush waffle iron lightly with neutral oil. Pour recommended amount of batter for your iron and cook until golden and crisp, about 3–6 minutes depending on your machine. Transfer cooked waffles to a warm oven (200°F / 95°C) directly on a rack to keep crisp while finishing chicken.
Fried Chicken
Brine
Place chicken pieces in a bowl and pour 1 cup buttermilk over them along with 1 tsp hot sauce if using. Cover and refrigerate for at least 30 minutes, up to 4 hours. This tenderizes and flavors the meat.
Prepare dredge
In a shallow bowl whisk together 1 cup flour, 1/4 cup cornstarch, paprika, garlic powder, onion powder, 1 tsp salt, 1/2 tsp black pepper, and 1/4 tsp cayenne until evenly distributed.
Egg wash
In a separate shallow bowl beat 2 eggs with 1/4 cup milk until smooth.
Dredge chicken
Remove chicken from buttermilk, letting excess drip off. Dip each piece into egg wash, then press into flour mixture so pieces are well-coated. For extra-crisp, double-dredge: after first dredge, dip again in egg and flour once more.
Heat oil
Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 1.5 inches (roughly 3–4 cups). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle and brown slowly.
Fry
Fry chicken in batches without overcrowding, cooking 4–6 minutes per side depending on size until golden brown and internal temperature reaches 165°F (74°C). Adjust heat to maintain 325–350°F. Transfer fried chicken to a wire rack set over a baking sheet and keep in the warm oven to stay crisp while finishing remaining pieces.
Hot Honey (house) - alternates
Make hot honey
In a small saucepan combine 3/4 cup honey, 1 tbsp apple cider vinegar and 1 tsp red pepper flakes. Warm gently over low heat, stirring occasionally, until honey is fluid and aromas bloom, about 3–5 minutes. Remove from heat and stir in 1 tbsp butter for gloss if desired. Let sit 5–10 minutes to infuse. Taste and strain if you prefer no flakes.
Alternates
If using spicy maple: warm equal parts maple syrup and a touch of cayenne (to taste) in a small saucepan. For regular maple: warm maple syrup lightly. For berry compote: simmer 1 cup mixed berries with 2 tbsp sugar and 1 tbsp lemon juice until thickened, then mash lightly.
Assembly & Serve
Plate
Place a warm waffle on each plate. Top with a piece (or two) of fried chicken. Dot with 1/2 tbsp unsalted butter if desired and dust lightly with powdered sugar for contrast.
Serve
Serve immediately while waffles are crisp and chicken is hot. Suggest offering extra hot honey or syrup on the side.
