Prepare cooked sausage

If your sausage or chorizo isn't already cooked, heat a small skillet over medium heat. Add 1 tsp neutral oil if needed and 120 g raw sausage, breaking it up with a spatula. Cook 6–8 minutes until browned and cooked through. Drain excess fat and set aside. If using pre-cooked sausage, simply crumble and set aside.

Whisk eggs

In a medium bowl, crack 4 large eggs. Add 30 ml whole milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk until the mixture is uniform and slightly frothy (about 20–30 seconds).

Scramble eggs

Heat a nonstick skillet over medium-low and add 1 tbs unsalted butter. Once melted and foaming, pour in the egg mixture. Let eggs sit undisturbed for 10–15 seconds, then gently push cooked edges toward the center with a spatula, tilting the pan to let uncooked egg flow out. Continue folding every 10–15 seconds until eggs are mostly set but still slightly glossy (about 2–3 minutes total).

Combine with sausage and cheese

When eggs are almost done, add the cooked crumbled sausage (120 g) to the pan and fold gently to combine and finish cooking for 20–30 seconds. Sprinkle 60 g shredded cheddar cheese over the eggs and sausage, remove the pan from heat, and let residual heat melt the cheese for 30–60 seconds. Taste and adjust seasoning if needed.

Tortillas & Assembly

Warm tortillas: Heat a clean skillet or griddle over medium-high. Lightly brush each tortilla with a little vegetable oil or place 1 tsp butter in the skillet and warm tortillas one at a time, about 20–30 seconds per side, until pliable and lightly charred in spots. Alternatively, wrap tortillas in a damp paper towel and microwave 20–30 seconds.

Assemble tacos: Place a warmed tortilla on a plate. Divide the egg, sausage, and cheese mixture evenly between the two tortillas (about half the mixture per taco).

Add toppings: Top each taco with 1 tbs chopped cilantro, 1 tbs salsa, 1 tbs pickled red onion or diced tomato, and a few slices of avocado (use half an avocado total). Add a dash of hot sauce to taste.

Serve: Fold tacos and serve immediately while warm.
