Prepare meat option
If using bacon: cook 2 strips in a skillet over medium heat until crisp, about 6–8 minutes, turning once. Drain on paper towels. If using Taylor ham/pork roll: heat a nonstick skillet over medium-high, add the 2 oz sliced pieces and cook 2–3 minutes per side until browned and heated through. If using scrapple: cook 2 oz slices in a skillet over medium heat 3–4 minutes per side until crisp on the edges. Keep warm.
Cook eggs
Reduce heat to medium-low and add remaining 1/2 tbs butter to a nonstick skillet. Crack 2 large eggs into a bowl and whisk lightly with 1 tsp salt and 1/4 tsp black pepper. For folded/flat eggs: pour eggs into skillet and let set slightly, then stir gently until mostly set, folding to create a firm but tender patty (about 1–2 minutes). For fried eggs: pour eggs separately and cook to desired doneness (sunny-side or over-easy) — target 1–2 minutes for sunny-side. If you want a compact sandwich shape, you can use a ring mold or spatula to shape eggs to fit the muffin.
Assemble sandwich
Place one slice of American cheese on the bottom half of the toasted muffin. Put the cooked egg on top of the cheese, then the meat choice (bacon, Taylor ham or scrapple). Top with the remaining muffin half. If you prefer melted cheese, return the assembled open sandwich to the skillet or under a broiler for 20–30 seconds until cheese softens.
Optional side
Heat 2 tbs vegetable oil in a skillet over medium-high heat until shimmering. Add 1 cup shredded potatoes in an even layer (season with 1/2 tsp salt). Press down with a spatula and cook without moving until bottom is golden brown and crisp, about 4–5 minutes. Flip in sections and cook another 3–4 minutes until crisp and cooked through. Drain on paper towels and serve alongside sandwich.
