Cocktail
Cucumber Simple Syrup (makes ~1 cup)
Method
Cucumber Simple Syrup (prepare ahead)
- 1
Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer.
- 2
Add the roughly chopped peeled cucumber to the simmering syrup. Reduce heat to low and simmer for 5 minutes to infuse flavor.
- 3
- 4
Strain the syrup through a fine mesh sieve or cheesecloth into a clean container, pressing the cucumber to extract liquid. Discard solids. Cool to room temperature, then refrigerate. Yields about 1 cup. Use 0.5 oz per cocktail; syrup keeps 1–2 weeks refrigerated.
