    Prepare and sweat eggplant

    Trim ends from the eggplants and slice into 1/2" rounds. Lay slices in a single layer on a rimmed tray, sprinkle both sides lightly with coarse salt, and let sweat for 30 minutes to remove bitterness and excess moisture. After 30 minutes, rinse slices lightly under cold water to remove salt, pat thoroughly dry with paper towels.

    Oil and roast

    Preheat oven to 425°F (220°C). Brush both sides of the dried eggplant slices with 3 tablespoons extra-virgin olive oil, arrange in a single layer on parchment-lined baking sheets. Roast 18–22 minutes, flipping once halfway, until golden brown and tender. Remove from oven and set aside to cool slightly.

Marinara Sauce

    Cook aromatics

    While eggplant sweats or roasts, heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the diced onion and a pinch of salt, cook, stirring occasionally, until translucent, about 6–8 minutes. Add minced garlic and cook 30–60 seconds until fragrant; do not brown.

    Simmer sauce

    Stir in tomato paste and cook 1 minute. Add crushed tomatoes, dried oregano, sugar (if using), salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and simmer uncovered 15–20 minutes to thicken slightly. Stir in torn basil leaves at the end and adjust seasoning to taste. Keep warm.

Cheeses & Assembly

    Prepare cheese and crumbs

    Preheat oven to 400°F (200°C) if not still warm from roasting. In a small bowl, beat the egg and combine with the gluten-free breadcrumbs or ground almonds to make a light binder; add a pinch of salt and pepper. This step is optional but gives a slight crust and helps hold cheese on eggplant.

    Layer the Melanzane Rustica

    Spread about 1/2 cup of warm marinara in the bottom of a 9x13" (or similar) ovenproof baking dish. Arrange a single layer of roasted eggplant slices to cover the bottom (you may overlap slightly). Brush or lightly spoon a little of the egg/crumb mixture onto each slice (optional), then top each with a slice of fresh mozzarella and a sprinkle of grated Parmesan. Scatter a few torn basil leaves. Spoon 1/3 to 1/2 cup marinara over this layer to cover cheese lightly. Repeat layering (eggplant, binder, mozzarella, Parmesan, basil, sauce) to make 2–3 layers until ingredients are used, finishing with sauce and a generous dusting of Parmesan.

    Bake to meld

    Cover the dish with foil and bake in the preheated 400°F (200°C) oven for 15 minutes. Remove foil and bake an additional 10–12 minutes until cheese is melted and edges are bubbling and slightly golden. If you prefer more browning, finish under the broiler 1–2 minutes—watch carefully to avoid burning.

Finishing & Serve

    Remove from oven and let rest 8–10 minutes to set. Drizzle 1 tablespoon extra-virgin olive oil over the top, scatter chiffonade basil, and finish with an additional sprinkle of grated Parmesan if desired. Taste and adjust salt and pepper to taste. Serve warm, cut into portions.
