    Prep aromatics and tools

    Finely mince the garlic. Thinly slice the green onions, separating whites from the dark green tops. Line a baking sheet with parchment and set aside lollipop sticks spaced evenly; this will be used to rest cooked lollipops.

    In a large mixing bowl combine 1 lb ground chicken, 3 minced garlic cloves, 1 cup grated Parmesan, 1 large egg, 3 tbs Panko breadcrumbs, sliced green onion whites, 2 tbs chopped cilantro (if using), 1 tsp salt, 1 tsp black pepper, and 1 tsp red pepper flakes. Mix gently with your hands or a spoon until ingredients are evenly distributed — do not overwork the meat to keep mixture tender.

    Portion the mixture into 12 equal pieces (about 1.5 oz / 45 g each). Roll each portion into a tight ball, then flatten slightly into a thick disc (about 2 inches diameter). Push a lollipop stick or skewer into each disc about halfway so it’s secure but still allows even cooking. Place assembled lollipops on the prepared parchment-lined sheet.

    Heat a large nonstick skillet over medium heat and add 2 tbs neutral oil. When oil shimmers, working in batches to avoid crowding, place lollipop discs stick-end up lying flat so the meat cooks evenly. Cook for 3–4 minutes per side until a golden crust forms and internal temperature reaches 165°F (74°C). Use tongs to gently flip; if discs are thick, cover pan for 1–2 minutes to ensure doneness. Transfer cooked lollipops back to the baking sheet.

Sweet chili glaze

    While the lollipops cook, combine 1 cup sweet chili sauce, 1 tbs rice vinegar, 1 tsp soy sauce, 1 tbs honey, and 1 tsp sriracha (if using) in a small saucepan. Warm over low-medium heat and stir until honey dissolves and mixture is glossy, about 2–3 minutes. Do not boil rapidly; remove from heat and keep warm.

    Brush or spoon the warm sweet chili glaze over the cooked lollipops, coating both sides. Alternatively, place lollipops on a wire rack over a sheet pan and brush glaze so excess can drip back into the pan. Return glazed lollipops to the skillet for 30–45 seconds per side if you want the glaze to caramelize slightly, watching carefully to avoid burning.

Finishes & garnish

    After glazing, sprinkle each Firecracker Lollipop with a little of the reserved 1/4 cup grated Parmesan, toasted sesame seeds, and sliced chives or green onion tops. If desired, finish with a squeeze of lime to brighten flavors.

    Arrange lollipops on a platter for serving. Serve hot or warm with extra sweet chili sauce on the side for dipping. Makes approximately 12 lollipops.
