    Make honey syrup with lemon

    In a small heatproof bowl or measuring cup, combine the honey and hot water. Stir until the honey dissolves completely to make a simple honey syrup. Allow to cool slightly (1–2 minutes).

    Cook down blueberries (optional for deeper flavor)

    Place the fresh blueberries in a small saucepan over medium heat with 2 tablespoons of the fresh lemon juice. Cook, stirring often, until berries begin to burst and release juice, about 4–6 minutes. Remove from heat and let cool 3 minutes.

    Blend and strain

    Transfer the cooked blueberry mixture (or if you prefer a raw fresher flavor, use the fresh blueberries without cooking) to a blender. Add the remaining lemon juice (about 10 tablespoons total equals 0.75 cup minus the 2 tbsp used in cooking), and the honey syrup. Blend until smooth, about 20–30 seconds. Strain the purée through a fine-mesh sieve into a bowl or pitcher, pressing down to extract as much liquid as possible. Discard solids. This yields a vivid, smooth blueberry-lemon base.

Assembly & Garnish

    Chill glasses and prepare ice

    Fill two glasses with ice cubes to chill them while you finish the base.

    Build the mocktail

    Divide the strained blueberry-lemon base evenly between the two prepared glasses (about 3/4 cup base per glass). Gently pour 1 cup of chilled sparkling water into each glass over the back of a spoon to preserve some effervescence and create a layered look. Stir once gently to incorporate.

    Garnish and serve

    Add 6 fresh blueberries and two lemon slices to each glass. Clap a few mint leaves between your palms to release their aroma and tuck them into the drink (optional). Serve immediately with a long spoon or straw so the drinker can stir before drinking.

    Adjust sweetness and acidity

    Taste one mocktail. If you prefer sweeter, add up to 1 tsp honey syrup per glass and stir. If you prefer brighter citrus, add 1/2 tsp fresh lemon juice per glass and stir. These adjustments keep the balance without losing fizz.
