Mushroom filling

    Prepare mushrooms

    Wipe mushrooms with a damp cloth or quickly rinse and pat dry. Trim stems if needed and slice mushrooms into 1/4-inch slices (about 1/4" thick). Mince garlic and finely chop shallot.

    Sauté

    Heat a 10-inch nonstick or well-seasoned skillet over medium-high heat. Add olive oil and 1 tablespoon unsalted butter. When butter foams, add sliced mushrooms in a single layer (they may overlap slightly). Let them cook undisturbed 2–3 minutes to brown, then stir and cook another 2–3 minutes until golden.

    Add minced garlic and chopped shallot and cook 30–60 seconds until fragrant. Sprinkle in thyme, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Continue cooking 1–2 minutes until shallot softens and any released liquid evaporates. Transfer mushrooms to a bowl and keep warm.

Omelette base

    Beat eggs

    Crack 3 eggs into a bowl, add 2 tablespoons milk, 1 teaspoon salt and 1/4 teaspoon black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy (about 20–30 seconds). This adds lightness.

    Heat pan

    Return the skillet to medium-low heat and add 1 tablespoon butter. Swirl to coat the bottom and melt the butter without browning; it should foam gently.

    Pour the beaten eggs into the pan, tilt the pan to distribute evenly. Let eggs set undisturbed for about 20–30 seconds until edges begin to set. Using a heatproof spatula, gently pull set edges toward the center while tilting the pan so uncooked egg runs to the edges. Repeat around the pan until the top is mostly set but slightly moist (about 1–1.5 minutes total).

Assemble & finish

    Add filling

    Spoon the warm sautéed mushrooms evenly over one half of the omelette. Sprinkle the grated Gruyère or cheddar (about 1/2 oz) over the mushrooms so it melts from residual heat.

    Fold

    Use your spatula to gently fold the omelette in half over the filling. Let cook 15–30 seconds more to allow cheese to fully melt and eggs to finish cooking. Avoid overcooking — eggs should be tender and slightly creamy, not rubbery.

    Plate and garnish

    Slide the omelette onto a plate. Sprinkle with chopped fresh parsley and, if using, a few drops (1/2 tsp) of lemon juice to brighten flavors. Serve immediately.
