Method

Main

  1. 1

    Prepare baked beans

Pour 120 g (about 1/2 cup) canned baked beans into a small saucepan. Heat over low–medium heat, stirring occasionally, until simmering gently, about 4–6 minutes. Keep warm on lowest heat while you cook the rest.

  2. 2

    Toast the bread

While beans warm, toast 2 slices of bread in a toaster to your preferred doneness. Butter immediately with about half of the unsalted butter (5 g) so it melts into the toast. Keep toasted slices warm.

  3. 3

    Cook sausage

Heat a nonstick or cast-iron skillet over medium heat and add 1 teaspoon vegetable oil. Place 1 pork sausage in the pan. Cook for 10–12 minutes, turning every 2–3 minutes so it browns evenly and cooks through (internal temperature 70°C / 160°F). If it browns too fast, reduce heat slightly. Transfer sausage to a warm plate and cover loosely with foil.

  4. 4

    Cook bacon

In the same skillet (wipe out excess oil if extremely greasy, leaving a little fat), add the 2 slices of bacon. Fry over medium heat for 2–4 minutes per side until crisped to your liking. Transfer bacon to a paper-towel-lined plate to drain and keep warm.

  5. 5

    Cook hash brown

If using a frozen hash brown, using a separate nonstick pan (or the same skillet after bacon if preferred), add 1 teaspoon vegetable oil and heat over medium. Place the frozen hash brown in the pan and cook 3–4 minutes per side until golden and crisp. If using an oven, bake according to package instructions (usually 200°C / 400°F for 12–15 minutes). Transfer to the warm plate with bacon and sausage.

  6. 6

    Fry the egg

Using the same skillet (wipe and add a little oil or add remaining butter 5 g), reduce heat to medium–low and crack 1 large egg into the pan. For a fried egg with set whites and runny yolk (sunny-side up), cook undisturbed for 2–3 minutes until whites are set but yolk still soft; cover pan for 20–30 seconds if whites need finishing. For over-easy, cook 1–2 minutes then flip gently and cook 15–30 seconds. Season with a pinch of salt and a grind of black pepper.

  7. 7

    Plate and serve

Arrange on a plate: place toasted buttered bread, add sausage, bacon, hash brown and the fried egg. Spoon the warmed baked beans into a small ramekin or directly onto the plate beside the other items. Add ketchup or HP sauce if using. Serve immediately.

Seasoning & Finishing

  1. 8

Adjust seasoning: sprinkle a little extra salt and black pepper onto the egg, sausage or hash brown to taste. Serve hot.
