    Beat eggs

    Crack the 3 large eggs into a medium bowl. Add 2 tablespoons milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until frothy and homogenous, about 20–30 seconds. This adds volume and ensures even seasoning.

    Preheat pan

    Place a nonstick 8–10 inch skillet over medium heat and add 1 tablespoon unsalted butter. Allow butter to melt and foam but not brown; it should coat the pan evenly.

Filling

    Cook bacon

    While the butter melts, heat a separate small skillet over medium heat (or use the same if preferred and adjust timing). Add the 3 bacon slices cut into 1/2-inch pieces and cook, stirring occasionally, until crisp and browned, about 6–8 minutes. Remove bacon with a slotted spoon to a plate lined with paper towel; reserve 1 tablespoon of bacon fat in the pan and discard excess if there's more than a tablespoon.

    Sauté mushrooms and aromatics

    Add 1 teaspoon olive oil to the pan with reserved bacon fat (or use the main omelette pan if you cooked bacon there). Add the 3 oz sliced mushrooms and 2 tablespoons diced onion. Cook over medium-high heat, stirring occasionally, until mushrooms release liquid and begin to brown, about 4–6 minutes. Add 1 minced garlic clove and cook another 30–45 seconds until fragrant. Season lightly with a pinch of salt and pepper.

    Combine filling

    Return the cooked bacon pieces to the mushroom mixture, stir to combine, and remove the pan from the heat. Keep filling warm while you cook the eggs.

Assemble and cook

    Pour eggs into pan

    With the nonstick 8–10 inch skillet over medium heat and butter melted, pour the whisked eggs into the center. Let the eggs sit undisturbed for about 10–15 seconds until the edges begin to set.

    Lift and tilt

    Using a silicone spatula, gently lift the set edges and tilt the pan so uncooked egg flows to the edges. Continue this for about 30–45 seconds to create mostly set but still slightly custardy eggs on top.

    Add filling and cheese

    Evenly distribute the warm bacon-mushroom-onion mixture over one half of the omelette. Sprinkle 1 ounce shredded cheddar cheese over the filling and add 1 tablespoon chopped fresh chives if using.

    Fold and finish

    Using the spatula, carefully fold the empty half of the omelette over the filling. Let the folded omelette cook 20–30 seconds more to melt the cheese and finish cooking (or up to 1 minute for firmer set). If desired, add 1 teaspoon extra butter around the edges to baste the omelette for a glossy finish.

    Slide the omelette onto a plate. Taste and add additional salt and pepper if needed, and serve immediately with hot sauce or ketchup on the side if desired.
