Combine ingredients
In a blender or large mixing bowl, add 2 cups plain yogurt, 1 cup cold water, and 1 teaspoon coarse salt. If you prefer a thinner ayran, increase water by 2–4 tablespoons; for thicker, reduce water slightly.

Mix until frothy
If using a blender: blend on medium-high for 20–30 seconds until smooth and lightly frothy. If using a whisk: vigorously whisk for 1–2 minutes until well combined and slightly foamy. The goal is a smooth, homogenous, slightly aerated drink.

Adjust seasoning and texture
Taste and adjust salt and water: add up to an additional 1/4–1/2 teaspoon salt if needed, or small amounts of water if too thick. Blend or whisk briefly after adjustments.

Chill (optional)
For best refreshment, chill the ayran in the refrigerator for 10–15 minutes, or serve immediately over ice.

Mint: sprinkle 1 teaspoon crushed dried mint or a few finely chopped fresh mint leaves on top of each glass. Stir lightly.

Lemon: stir 1 teaspoon lemon juice into the blended ayran for a bright, tangy variation. Taste and add more only if desired.
