Method

Eggs & Breakfast Meats

  1. 1

Prep and cook sausages & bacon

Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tbs oil. When the oil shimmers, add the 2 sausages. Cook for 8–10 minutes, turning every 2–3 minutes, until evenly browned and cooked through (internal temperature ~71°C / 160°F). Move sausages to a warm plate and keep skillet at medium heat. Add the 2 slices of bacon to the same skillet and cook 2–4 minutes per side (depending on thickness) until crisped to your liking. Transfer bacon to paper towel-lined plate.

  2. 2

    Fry the eggs

Wipe skillet if there is excess fat leaving a thin coating. Add 1 tbs butter and warm over medium-low. Crack 2 eggs into the skillet, keeping them separate. Season with 1/4 tsp salt and a pinch of black pepper. For sunny-side-up: cook uncovered 2–3 minutes until whites set but yolks still runny. For over-easy: cook 2 minutes, carefully flip and cook 20–30 seconds more. Remove eggs to plate.

Baked Beans

  1. 3

While meats cook, pour 200 g canned baked beans into a small saucepan. Add 2 tbs water to loosen sauce. Warm over low-medium heat, stirring occasionally, for 4–6 minutes until heated through. Keep covered on low heat until plating.

Vegetables & Hash Brown

  1. 4

    Cook hash brown

If using frozen hash brown: cook according to package — typically 3–5 minutes per side in 1 tbs oil in a frying pan over medium heat until golden and crisp. If fresh: heat 1 tbs oil in a skillet and fry 3–4 minutes per side until crisp. Transfer to a plate and season lightly with salt.

  2. 5

    Grill tomato and mushrooms

While the hash brown finishes, halve the tomato horizontally. In a small pan or the same skillet, add 1 tbs olive oil and heat to medium. Place cut-side-down tomato and cook 2–3 minutes until slightly caramelized. Add the halved mushrooms cut-side down and sauté 3–4 minutes until browned. Sprinkle 1/4 tsp salt and 1/8 tsp black pepper over the vegetables. Remove to plate.

Toast & Drink

  1. 6

    Toast bread

Toast 2 slices of bread to desired darkness in a toaster or under a broiler for 1–2 minutes per side. Spread remaining butter (use portion of the 1 tbs reserved for toast) on warm toast.

  2. 7

    Make tea or coffee

Boil or kettle 250 ml hot water. For tea: place 1 tea bag in a mug and pour hot water over it; steep 3–5 minutes then remove bag. Add milk to taste (about 30 ml if desired). For coffee: brew 1 serving of ground coffee with hot water (e.g., pour-over or instant) and add milk if desired.

Plating

  1. 8

Arrange everything on a plate: 2 fried eggs, 2 sausages, 2 bacon slices, a portion of baked beans in a small ramekin or on the plate, grilled tomato half, sautéed mushrooms, hash brown, and 2 slices of buttered toast. Serve immediately with tea or coffee.
