Prepare base

Chill the neutral malt base or pre-made unflavored hard seltzer base to ~2–4°C. If using a light beer as the neutral base, gently degas by stirring to remove excess foam and off-odors. Measure 3.5 L into a sanitized food-grade container.

Optional alcohol adjustment

If you want to slightly raise ABV for stability or profile, add up to 100 ml of neutral spirit (vodka) to the base and gently mix. Stir slowly to avoid introducing excess oxygen.

Carbonation prep

Decide whether to bottle-condition or force-carbonate. For force-carbonation, chill base and plan to carbonate to ~2.5–3.0 volumes CO2 using a keg/CO2 setup. If bottle-conditioning, dissolve 5 g priming sugar in 40 ml boiling water, cool and stir into the whole batch evenly just before packaging.

Stabilizer (optional)

If you plan to back-sweeten or add fresh fruit purées that could restart fermentation, add 0.5 tsp potassium sorbate and stir to distribute per the manufacturer instructions to help prevent refermentation.

Citrus Yuzu pod

Combine 60 ml yuzu juice, 15 ml fresh lemon juice, 1 tbs lime zest, and 10 ml of the simple/agave syrup in a small sanitized container. Taste and adjust sweetness; the final flavored seltzer should be bright and tart with low sweetness. Strain through a fine sieve or cheesecloth to remove pulp and zest shards. This yields concentrate for ~4 cans; portion as needed (about 30–40 ml per can).

Cucumber-Mint pod

Purée 80 g peeled cucumber with 8 g fresh mint leaves and 20 ml simple syrup in a blender until very smooth. Strain through a fine sieve, pressing solids to extract as much liquid as possible. Chill the concentrate. Aim for ~40–45 ml per can of flavoring. Adjust mint to taste (too much will be overpowering).

Hibiscus-Ginger pod

Steep 8 g dried hibiscus in 150 ml near-boiling water for 5–7 minutes to make a strong infusion. Strain and cool. Stir in 10 g grated ginger and 20 ml honey or cane syrup while warm to dissolve. Taste and cool to refrigerator temperature. Strain again to remove fine particulates. Use ~35–45 ml per can depending on desired intensity.

Finishing & Packaging

Portioning flavor to cans/bottles

Sanitize cans or bottles. Into each sanitized vessel, dose the appropriate flavor concentrate: for a mixed variety 12-pack, allocate 4 cans per flavor. Typical dosing: Yuzu 30–40 ml per 355 ml can, Cucumber-Mint 40–45 ml, Hibiscus-Ginger 35–45 ml. Keep records so each can gets the same amount for consistency.

Combine base and flavor

Gently fill each can or bottle with chilled base seltzer up to the fill line (leave headspace recommended by your packaging). For force-carbonation: if using pre-carbonated base, fill quickly to minimize CO2 loss and cap/seal immediately. If using uncarbonated base, fill then carbonate in a keg or counter-pressure filler to achieve ~2.5–3.0 volumes CO2.

Cold conditioning

After sealing, chill the packaged cans/bottles at 2–4°C for at least 24–48 hours to let flavors marry and CO2 equilibrate. This also helps any micro-particulates settle.

Final adjustments & serve

If a brighter tartness is needed after tasting, very small additions of citric acid (start with 1/8 tsp per 4 cans worth of concentrate) can be dissolved into the corresponding flavor concentrate and re-dosed. Add 5 ml natural fruit extract if you want to boost aroma. Label cans and serve cold. Store refrigerated and consume within a few weeks for peak freshness.
