Prepare glass
Place a large rocks glass on your workspace. If you prefer a slightly chilled glass, fill it with ice and set aside while you assemble the drink; discard that ice before pouring.
Sweetener
If using simple syrup: add 1/4 oz (about 2 tsp) simple syrup to the glass. If using a sugar cube: place the cube in the glass, add 3 dashes of Angostura bitters and a few drops (about 1/4 tsp) of water, then muddle until the sugar is mostly dissolved and texture is sandy.
Add ice and stir
Add one large clear ice cube (or several large ice cubes) to the glass. Using a bar spoon, stir the drink gently for 20–30 seconds (about 15–20 full rotations) until the mixture is chilled and slightly diluted — the exterior of the glass will sweat and the ice will have a light frost.
Garnish and finish
Express the oils from an orange peel by holding it over the drink (skin side down) and giving it a firm squeeze so the oils spray onto the surface; rub the peel around the glass rim, then drop it into the drink as garnish. Optionally express and add a half lemon peel for a brighter citrus note.
Serve
Serve immediately on the rocks. Provide a short stirring spoon or coaster as desired.
